Eating Well


Why is it that January seems to remind us to eat well? It's the month when fresh produce comes from afar as winter envelops this part of the world. It's hard to eat well and be mindful of the Earth. Most of our fruit and vegetables come from afar. I try to minimize both my carbon and ethical footprints, but this is not always easy, particularly in winter.

  1. It's a dilemma in CO, too, where most of the food is shipped. However, I won't stop eating. I do use less paper products than I in the past.
